See how the sun turns from old gold to orange and then vermilion from Café Mambo or toast from the yacht to the night that begins – with French champagne of ineffable price that dozes in the ice bucket – while the last light of day touches your back. Or even make up in front of the mirror and check the tattoos in the hotel room, ready to experience a session of historical techno.
There are many Eivisses on the same island. Sometimes opposed, almost always in parallel. The White Island is also a melting pot in which soccer players, artisans, models, tycoons in a hurry to spend money, designers, peasants, electronics dilettantes and newcomers with a lot of legend in their ears and a desire to experience it all come together. On this trip we intend to explore how many Eivisses a traveler without prejudice can find.
From a table at a minimum of 200 euros per head to a cutlery for 1,650 euros
Don’t expect to be served homemade rice pudding in a tupperware at this other establishment: among the most desirable restaurants in glamorous Eivissa, Lío stands out , whose legend has allowed it to open a branch in London. This temple of hedonism – restaurant, club and cabaret – consumes 500 kilos of lobster, 6,000 oysters and 5,000 bottles of champagne per season.
Open to the sea above the Marina Ibiza marina, it has kicked off the season (featuring Grammy-winning American DJ David Morales), so if you want to book a table for this summer, you’ll need to hurry up and have at least 200 euros ready. per head (vip tables for 6, at 1,500 euros) Directly impossible is Sublimotion: haute cuisine with virtual reality technology and whose cutlery rises to 1,650 euros per diner. They read well. Paco Roncero ‘s is currently the most expensive restaurant in the world. Just a five-minute walk away, and also in the Playa d’en Bossa area, rises the Ushuaia complex : a luxury hotel and club for epic parties based on VIP tables (between 500 and 1,000 euros to start) and electronic music with the best DJ.

A highly recommended experience and with points similar to Lío, which is very close, is the one offered by Heart , a union of the talent of the Adrià brothers in the kitchen and Cirque du Soleil in the show. The price of one night is around 250 euros, drinks aside. Blue Marlin (in Cala Jondal) is perhaps the best-known beach club on the island: with a restaurant, a boutique, beautiful people and pleasure yachts whose owners and guests look at the island from the sea, dedicated to dolce far niente.
Lately everyone is talking about La Gaia , located in the Gran Hotel Ibiza–a great luxury establishment that has just received the award for the best resort in Spain, awarded by the readers of Condé Nast Traveler– and whose menu is based on a new-fangled fusion, the Mediterranean kaiseki.
Of course, we cannot ignore Nobu , the chain owned by Robert de Niro and one of the most expensive establishments in Eivissa. The 980 euros per night that a room costs on the last Saturday of July will seem cheap if you jump to mid-August, where a single night on a weekend skyrockets to 1,385 if you book it now. Nobu offers the most exquisite: a Six Senses spa, John Frieda beauty salon and Nobu Matsuhisa’s menu, Peyote (high-quality Mexican cuisine), Chambao (seafood) and Celicioso (suitable for coeliacs).

Exclusive Eivissa finds one of its greatest exponents in the Palladium Hotel Group holding company, set up by former minister Abel Matutes and which has found continuity in his son: his are Ushuaia, Hard Rock, Bless, the Grand Palladium hotels and beach clubs such as Zela and tatel. José Luis Benítez is director of institutional relations at Palladium.
We asked him about his company philosophy: “We want our client to be our fan. To do this, we train the staff with the aim that they enjoy their job. And the customer perceives that good atmosphere. We do everything to get what our clients request – exclusive services, avant-garde restaurants – trying to give them that extra so that their vacations are a dream”. Palladium is part of the select label Ibiza Luxury Destination (ILD). Born nine years ago, it brings together 49 partners with the common goal of differentiating the offer of luxury products and distinguishing a quality service.
